I did not get a pizza stone. I got a "plate setter," which is an ABSOLUTE must have. I just use an old pizza stone from my kitchen on top of that if doing pizza. Didn't get half grids, as I generally don't cook that many things at once.
Hear this: there is NO COMPARISON betweeen any other smoker and the BGE, for any that doubt. I've had them all. I no longer own anything but the BGE. Here's what I did on thanksgiving. Started egg at 7am. Ran it 325 from 730 until 1pm smoking an 18 pound turkey. Took the turkey off. Put on a 15 pound pork shoulder for the tailgate. Ran that until almost midnight at 225. Get this: I never added charcoal or wood chips!!!!! What I put in at 7am was enough. By the way...going to the subject of this thread, I only minutely adjusted the temperature 3-4 times the whole day. The temp just doesn't change once set. The only reason to adjust is to change the rate of cooking.
Then, on Saturday, I re-started (did add charcoal) and ran the BGE up to 900 degrees to cook steaks. Of course, each meal was better than anything I've ever had at even the best restaurants. That's not about me...it's because of the egg. It is that good. Best part, it will last at least the rest of my lifetime (I'm 39). I will never buy another grill/smoker, unless I get a small egg for tailgating, or a full sized pig smoker for full pigs.
When you consider it will last 25-50 years, the BGE is a bargain. Guys, seriously, if you can spare $50 per week, or even month, save up the money and get one. At $50 per month, you'll have one in time for football season 2014!!!
